*.prj\COMPILE\Tool_path

By default, the default toolchain specified using the Build-Tool Properties window is used to perform the build.

This can be overridden in the PROJECT group using the Tool_directory setting.

Use this pathname to override both these settings, and to specify a different compiler for the project.
